The three farms are located between 1,050 and 1,700 meters high. Finca San Pablo has the highest vineyards in the province, and some of the highest in the world. The high altitude of the farms has two central advantages: water and temperatures.
The farms of Bodegas Salentein are irrigated with pure water from the melting of the Andes, coming directly from the streams or from the napas that are under the vineyards. The clarity and purity of the water produces a low pH in the grapes, a higher acidity and wines with more color and storage potential.
The soils of the three farms vary, but in general they are alluvial, sandy and are located on a bed of stones. These features facilitate patency and drainage. These factors allow that, through regulated irrigation, Bodegas Salentein can control both the vigor of the vine and the quality of the grapes.
